  • 1 tablespoon honey
  • 1 cup chopped onion
  • 1 cup yellow cornmeal
  • ¼ cup sugar
  • 2 eggs
  • 1 egg white
  • 1 tablespoon lime juice
  • 1 cup flour
  • 1¼ cups buttermilk
  • ½ teaspoon baking soda
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • 2 garlic cloves, minced
  • 2 teaspoons minced jalapeños
  • 6 tablespoons butter
  • 1 teaspoon baking powder
  • 1 cup fresh corn kernels
  1. Preheat the oven to 400 degrees F.
  2. Melt 1 tablespoon of the butter in a skillet over a medium high heat.
  3. Sauté the onion and garlic for 2 minutes, stirring now and then.
  4. Add the jalapeño, corn and half the salt and cook for a couple of minutes.
  5. Remove from the heat, add 2 tablespoons of butter and toss to melt it.
  6. Mix together the rest of the salt, the flour, cornmeal, sugar, baking soda, baking powder and chili powder in a bowl.
  7. Combine the eggs, egg white and buttermilk and add the onion to this mixture.
  8. Combine the buttermilk mixture and flour mixture, stirring until moist.
  9. Spoon the muffin batter into 15 greased muffin cups and bake for 20 minutes or until golden.
  10. Cool in the pan for 5 minutes on a wire rack, then remove the muffins from the pan and cool them completely.
  11. Combine the rest of the butter with the honey and juicy in a small bowl and serve this with the muffins.
