Ingredients
  • 1 cup milk
  • 2 cups heavy cream
  • 5 eggs
  • 2 teaspoons vanilla extract
  • ⅔ cup white sugar
  • 14 oz sweetened condensed milk
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Heat the sugar in a nonstick pan over a medium heat, shaking and swirling occasionally to distribute the sugar, until it is dissolved and begins to brown.
  3. Lift the pan a few inches above the heat source and continue to brown the sugar until it becomes a dark golden brown.
  4. You can slightly stir while cooking, but continually stirring causes the sugar to crystallize which you do not want.
  5. Pour the caramelized sugar into a 1½ quart casserole dish or a large loaf pan, and swirl to evenly coat the bottom of the pan.
  6. In a blender, combine sweetened condensed milk, cream, milk, eggs and vanilla and blend on high for a minute.
  7. Pour over the caramelized sugar.
  8. Place the filled casserole dish into a larger pan and add 1 inch of boiling water to the outer pan.
  9. Bake for 50 to 60 minutes, or until the Mexican flan recipe is set.
  10. Chill it for an hour or more, then serve cold.
