  • 1 cup melted butter
  • 15 oz cream-style corn
  • 1 cup all-purpose flour
  • 2 oz chopped green chile peppers
  • 1 cup yellow cornmeal
  • ½ cup shredded Monterey Jack cheese
  • ¼ teaspoon salt
  • 1 cup white sugar
  • 4 eggs
  • ½ cup shredded Cheddar cheese
  • 4 teaspoons baking powder
  1. Preheat the oven to 300 degrees F.
  2. Beat the sugar and butter together in a bow, then beat in the eggs one at a time.
  3. Mix in the chilies, cream corn, Monterey Jack and Cheddar cheese.
  4. In another bowl, stir together the cornmeal, flour, salt and baking powder. Add the flour mixture to the corn mixture and stir until smooth.
  5. Pour the batter into prepared pan.
  6. Bake for 1 hour, until a toothpick inserted into center of the corn bread comes out clean.
