  • 4 grilled chicken breast halves (no bones or skin)
  • 8 oz shredded Cheddar cheese
  • 36 small corn tortillas
  • 1 tablespoon vegetable oil
  • ¼ teaspoon ground cumin
  • 8 oz shredded Monterey Jack cheese
  • 8 oz picante sauce
  • Few drops of liquid smoke (optional)
  1. Preheat the oven to 350 degrees F.
  2. Shred the chicken with a pair of forks or else just using your fingers.
  3. If your chicken was not cooked on the barbeque, add a couple of drops of liquid smoke if you like, to add that barbacoa taste.
  4. Combine the chicken with the cumin and picante sauce in a bowl.
  5. Heat the vegetable oil and place a corn tortilla in it for a couple of seconds per side to soften.
  6. Repeat with all of the tortillas then let them sit on paper towel to soak up the excess grease.
  7. Spoon a tablespoon of the chicken mixture in the center of a tortilla and sprinkle some cheese on top.
  8. Roll up the tortillas and arrange on a lightly greased cookie sheet seam side down.
  9. Repeat with all of the tortillas.
  10. If there is any cheese left over, you can sprinkle it over the rolled tortillas.
